Chef Karen Breshears is a registered and licensed dietitian, and an instructor. Breshears, who received masters degrees from UCM and Alabama, began her career in 1999, after working two years as a registered dietitian and more than 15 years in the food service industry. She primarily teaches the food classes, which include food preparation, quantity food production and service, sanitation and safety, food systems management, advanced food systems management, and experimental foods.
